Chorizo con Huevo (Chorizo and eggs)

What is chorizo?

There are different types of chorizo however for today’s recipe we are using Mexican chorizo.

Mexican chorizo is a spicy pork sausage made from spices and dried chili peppers.

The dried chili peppers are what gives the chorizo it’s red color.

You can find chorizo in your local carnicería (Mexican meat market).

Your Mexican meat market is definitely where you want to buy your chorizo from.

While you may be able to find it at your regular grocery store chains it won’t be anywhere near as good as from the carnicería.

The carnicerías sell the chorizo in links as shown in the photo below.

How to make chorizo con huevo

Crack the eggs into a bowl and beat with a fork for a couple of minutes. Set aside.

Remove the chorizo from the casings and put them in a skillet and heat it up over medium high heat.

Crumble the chorizo into small pieces with a spatula while it’s cooking.

It will take about 8 minutes for the chorizo to fully cook.

Transfer the cooked sausage to a paper towel lined plate to drain.

Leave a little bit of grease in the skillet to cook the eggs.

Chorizo is very greasy you don’t want to skip the step of draining the chorizo.

Reduce the heat to medium low and add the eggs to the skillet.

Add the chorizo back to the skillet with the eggs.

Stir the chorizo and eggs together.

Continue to stir until the eggs are fully cooked.

It should take around 5 minutes for the eggs to fully cook.

What to eat with huevos con chorizo?

Huevos con chorizo can be accompanied with beans.

My husband loves them with these black beans.

And he loves to eat it with these Mexican pickled vegetables as well.

And you can’t forget the warm corn tortillas!
