Breakfast Sausage Quesadillas

These easy breakfast sausage quesadillas are so delicious. They’re filling and full of flavor! This simple recipe has just three ingredients. Sausage, cheese and tortillas. Now who doesn’t love an easy, simple yet yummy breakfast recipe?

What should I put in my quesadilla?

Quesadillas are super versatile. They can be made with corn or flour tortillas. With meat or without. There are really so many ways to enjoy them. Here are a couple of our favorites, tuna melt quesadillas and fried quesadillas.

How to make breakfast sausage quesadillas

The first thing you need to do is brown and crumble the ground sausage. Just heat a skillet over medium heat and add the sausage. Break it up with a spatula while it cooks.

Once the sausage has cooked transfer it to a paper towel lined plate to drain.

I used Jimmy Deans regular sausage.

Here are the type of flour tortillas I used.

In a different skillet over medium heat warm up the tortilla for about 20 seconds on each side.

Sprinkle some shredded cheese on one side of the tortilla. Then add a couple of tablespoons of sausage on top.

You can use the shredded cheese of your choice. I used mozzarella cheese.

Add some more shredded cheese on top of the sausage.

Fold the quesadilla. Cook for about a minute.

Then flip the quesadilla over and cook for another minute.

Transfer the quesadilla to a plate. Put another tortilla in the skillet and repeat the above steps until you have the made the number of quesadillas you desire.

What to serve with sausage quesadillas

Since these are breakfast style quesadillas I suggest serving them with some eggs. Scrambled eggs with red bell pepper or Mexican style scrambled eggs are some good options.

If you’re into spicy I suggest you serve these breakfast sausage quesadillas with this habanero salsa. It adds heat and even more flavor!

What is the best melting cheese for quesadillas?

There are a variety of cheeses you can use in quesadillas. I prefer using shredded mozzarella in mine. Some other options you could use include cheddar jack, Monterrey jack, or even pepper jack for some spiciness.

Ingredients

  • 8 flour tortillas
  • 1 lb breakfast sausage browned and crumbled
  • 2 cups mozzarella cheese shredded

Instructions

  1. Brown and crumbled the sausage.

  2. Transfer the sausage to a paper towel lined plate to drain.

  3. In a different skillet over medium heat add a tortilla. Heat it up on both sides.

  4. Sprinkle some cheese on one side of the tortilla. Then add a couple tablespoons of sausage on top of the cheese. Add more cheese on top of the sausage.

  5. Fold the tortilla and continue cooking for about a minute.

  6. Flip the quesadilla to the other side and continue to cook for another minute.

  7. Transfer the quesadilla to a plate.

  8. Repeat the above steps with the rest of the tortillas.
