This amazing migas con huevo recipe is a great way to change up your breakfast routine although I’m not gonna lie I totally make these for dinner every now and then. They’re absolutely delicious and insanely easy to make!

What are migas con huevo made of?
Migas con huevo consists of strips of toasted corn tortillas cooked with scrambled eggs.
Sometimes sliced hot dogs are added as well.
Migas can then be garnished with salsa.
There’s nothing better than a simple, humble and yummy meal.
And that’s exactly what this migas recipe is.
I like to garnish mine with raw diced white onion and cilantro and it gives it such incredible flavor!
I can’t eat this dish without it.
I also like to add a little of my salsa macha to add even more amazing flavor and spice.

How to make migas con huevo
Beat some eggs in a bowl. Set them aside. Grab a stack of tortillas.

Cut them into squares.

Heat up oil in a skillet over medium heat.
Add the tortilla strips and toast them until they’re a golden color.
Make sure to move them around often so they don’t burn. This will take around 10 minutes.

They should look like this.

Add some butter to the pan and swirl it all around.

Once the butter has melted add the eggs to the skillet.

Move the eggs and tortilla strips around constantly until the eggs are cooked through.
Season with salt to taste.

How to serve migas con huevo
Serve and garnish the migas con huevo with diced onion, cilantro and the salsa of your choice.
This habanero salsa is also super delicious on migas.
It already has cilantro and diced onion in it.
If you’d like to stretch the migas con huevo further, I suggest serving them with a side of pinto beans.
Another thing I love about migas is that they’re economical so they’re perfect for families on a budget.
If you’re big on Mexican food then you most likely already have the ingredients needed to make them on hand.
Migas recipe tips
- Use corn tortillas not tortilla chips.
- Experiment to find the ratio of tortillas to eggs that you like.
- Do garnish the migas with your favorite garnishes. This takes it to a whole new level flavor wise.

Migas con Huevo
Migas con huevo are a Mexican recipe made with corn tortillas and eggs.
Ingredients
- 6 corn tortillas
- 6 eggs
- 5 tbs vegetable oil
- 1 tbs butter
- 1/3 cup onion diced (optional)
- cilantro optional
- salsa macha optional
- salt to taste
Instructions

Beat the eggs in a bowl and set aside.

Stack the tortillas on top of each other and cut them into squares.

Add them to the oil and cook until toasted. This will take about 10 minutes. Make sure to stir them around frequently to prevent them from burning.

Add the butter to the skillet and move it around to make sure the skillet it coated.

When the butter is melted add the eggs.

Stir the eggs and tortilla squares around constantly with a spatula until the eggs are cooked through.

Garnish with the onion, cilantro and salsa macha. Enjoy!
