Huevos con jamon or “ham and eggs” is a delicious and easy Mexican breakfast that you can have ready and on the table in no time! Ingredients needed
Huevos con jamon is a simple breakfast recipe that uses just 6 common ingredients which include jalapeño, onion, ham slices, eggs, oil and salt.
If you want to make it even easier you can omit the onion and jalapeño. However I prefer to include them because it adds extra flavor and some spice.
I got my ham at my local Mexican supermarket however you can use any thin sliced ham. This ham would also be perfect for a torta de jamon (ham sandwich) or in these cheesy Mexican potatoes.
What is the most common breakfast in Mexico?
I asked my husband this question and he had several answers. He says that a typical Mexican breakfast could be anything from the recipe I’m sharing today to chilaquiles with a fried egg on top to camote con leche (sweet potato with milk) to atole de avena (Mexican oatmeal).
What I really love about Mexican breakfasts besides them being absolutely delicious is that they also tend to be very economical typically using up any leftovers or produce before they go bad.
How to make ham and eggs
Thinly slice 1/2 of a jalapeño. I used about 1/4 piece of a very small white onion and I sliced into thin slices.
Then dice 2-3 slices of ham.
Then crack the eggs in a bowl and beat with a fork for a couple of minutes.
Heat up the oil in a skillet over medium heat. Then add the jalapeno and onion. Season with salt and cook for about 3-4 minutes or until softened.
Then add the diced ham and stir it around and let it warm up for about a minute.
Then add the beaten eggs. Reduce heat to medium low.
Stir the eggs around constantly until they are cooked through. This will take just 2-3 minutes.
Then, remove the skillet from the heat.
That’s all there is to this easy Mexican breakfast recipe.
I like to serve these Mexican scrambled eggs and ham with a side of refried black beans to make it a complete and filling breakfast.
And for my husband I also warm up some corn tortillas. For him this meal wouldn’t be complete without tortillas!
