Camote con leche or sweet potatoes with milk are great for breakfast or even dessert. This recipe has just the right amount of sweetness to it but you can always adjust it to your liking.
This is one of my husbands favorite things to eat in the mornings.

What you will need
- Sweet potatoes (scrubbed and cleaned)
- Cinnamon stick
- Whole cloves
- Brown sugar
- Vanilla extract
How to make it
The first thing you want to do is scrub and clean your sweet potatoes.
Then slice them into small circles as shown below.
Try to make them more or less the same thickness so they’ll cook at the same rate.
Put the sweet potatoes, sugar, cinnamon stick, whole cloves and water in a pot. Bring to a boil.
Reduce heat to medium and cover. Cook for about 20 minutes or until the sweet potatoes can be easily pierced with a fork. Add the vanilla extract and remove from heat.
Serve the sweet potatoes in a bowl with some of the liquid. Add a splash of milk to the bowl.

Camote con leche is a delicious and easy Mexican dish of sweet potatoes
- 2 sweet potatoes scrubbed clean and sliced
- 5 cups water
- 1 cinnamon stick
- 2 whole cloves
- 1 cup brown sugar
- milk to taste
- 1 tsp vanilla extract
Put the sliced sweet potatoes in a pot. Then add the sugar, cinnamon stick, whole cloves and water to the pot.
Bring the mixture to a boil then reduce heat to medium and cover.
Let it cook for 20 minutes or until the sweet potatoes are tender. Add the vanilla extract and remove from heat.
Serve the sweet potatoes in bowls with some of the liquid and add a splash of milk.
