Camote con leche or sweet potatoes with milk are great for breakfast or even dessert. This recipe is also referred to as “camotes enmielados” which translates to “candied sweet potatoes”.

Camotes enmielados is one of my husbands favorite things to eat in the mornings or as a snack before bed.
He absolutely loves sweet potatoes and this recipe is his favorite way to enjoy them.

What you will need
- Sweet potatoes (scrubbed and cleaned)
- Water
- Cinnamon stick
- Whole cloves
- Brown sugar
- Vanilla extract
- Milk

How to make camotes enmielados
The first thing you want to do is scrub and clean your sweet potatoes.

Then slice them into small circles as shown below.
I like to slice some of the circles in half.
However you slice them, try to make them more or less the same thickness so they’ll cook at the same rate.

Put the sweet potatoes, sugar, cinnamon stick, whole cloves and water in a pot. Bring to a boil.

Reduce heat to medium and cover. Cook for about 30 minutes.
Then uncover the pot and continue to cook for another 10 minutes. By now the sweet potatoes should be tender.
Add the vanilla extract and remove the pot from heat.
Make sure to remove the cinnamon stick and whole cloves before serving.

How to serve Mexican candied sweet potatoes
These candied sweet potatoes can be served as is in a bowl with some of the syrup poured on top. Or you can make yourself a bowl of camote con leche by adding a splash of milk to your bowl.
I prefer mine with milk.

Variations
For more authentic camotes enmielados use piloncillo in place of the brown sugar. If you don’t have Mexican cinnamon sticks you can use regular cinnamon sticks instead.
How long does it last?
Once cooled transfer the sweet potatoes and it’s syrup to a bowl with a tight fitting lid. Store it in the refrigerator where it should stay good for 3-4 days.
