Huevos con Jamon

Ingredients

  • 1/2 jalapeno
  • 1/4 piece of a small white onion
  • 3 ham slices
  • 4 eggs
  • 1 tbs vegetable oil
  • salt to taste

Instructions

  1. Thinly slice the jalapeno and the onion piece.

  2. Dice the ham.

  3. Crack the eggs into a bowl and beat with a fork for a couple of minutes.

  4. Heat up the oil in a skillet over medium heat.

  5. Then add the jalapeno and onion to the skillet. Season with salt and cook for about 3-4 minutes or until softened.

  6. Next, add the diced ham to the skillet and stir it around and let it warm up for 1 minute.

  7. Add the eggs to the skillet. Reduce heat to medium low.

  8. Stir the eggs around constantly until they are cooked through. This will take just 2-3 minutes.

  9. Remove skillet from heat.

  10. Serve and enjoy.
