Scrambled Eggs with Turkey

This easy and delicious breakfast of scrambled eggs with turkey is a great way to change up your breakfast routine and clean out your fridge!

I like to use up whatever I have in my fridge to make this easy breakfast scramble.

This recipe can be easily adapted to what you have in your kitchen.

This was such a yummy recipe that my husband requested of me the other day.

He asked me to scramble him some eggs with the turkey lunch meat we had in the fridge.

I thought it was an odd request but I still made it for him and I decided to throw in some some onion and bell pepper.

It turned out quite delicious.

In fact I’ve made it a few times since then.

Ingredients needed

  • Eggs
  • Turkey lunch meat
  • White onion
  • Bell pepper (color of your choice)
  • Vegetable oil
  • Ground black pepper
  • Salt
  • Garlic powder

How to cook scrambled eggs and turkey

First crack the eggs into a large bowl. Add salt and pepper. Beat with a fork for a couple of minutes. Then set them aside.

Next chop up the turkey lunch meat and the bell pepper. Slice the onion.

Heat up some oil in a skillet over medium heat. Once hot add the onion and bell pepper. Cook for about 5 minutes or until softened stirring occasionally.

Then pour in the beaten eggs. Let the eggs set for a few seconds then using a spatula gently stir the eggs.

While the eggs are still runny add in the chopped turkey.

Continue to cook for a few more minutes. Stirring frequently until the eggs are done.

Then serve and enjoy! These scrambled eggs with turkey lunch meat are so yummy!

It’s really a great way to use up turkey lunch meat. If you don’t have turkey then just eggs and red bell pepper are also really good!

This recipe can be easily adapted. You can switch out the turkey lunch meat for either chicken or ham.

Instead of bell pepper you can use jalapenos if you like spicy food. It’s really up to you.

  • 1/2 onion thinly sliced
  • 3/4 cup red bell pepper diced
  • 2 tbs vegetable oil
  • 1/4 tsp ground black pepper
  • 1/2 tsp salt
