Most people we know enjoy fresh homemade bagels. To the bagel aficionado, you already know what a perfect bagel entails.

Yes, it’s the one with the crusty exterior but soft on the inside. There’s a firm chewiness to the interior. When toasted, it’s a bite of heaven!

However for convenience sake, today I am using store-bought bagels. Homemade bagels aren’t difficult to make as long as you take your time.

But if they’re not your thing, not to worry! This article is about bagels, not making them.

There are numerous ways to enjoy bagels. You can opt for plain bagels which are probably the most popular because of how versatile they are. They can be topped with cream cheese, butter or peanut butter. They can also be made into a sandwich like today’s recipe.

What is in an everything bagel breakfast sandwich?

We’ve carefully selected the ingredients that go into our breakfast bagel so that they can be enjoyed without competing for attention. It includes:

Everything bagels

Everything bagels are one of the more popular flavors therefore your grocery or corner bakery should have plenty of them.

Turkey meat

For the turkey meat, you can use up those leftover turkey slices from the holidays or your usual turkey deli meat. The meat filling should be sliced thinly to best enjoy the flavors of the sandwich. Frankly, it’s also much easier to sink your teeth into your bagels if the meat is sliced thin.

Provolone

In choosing which cheese to put in you don’t want a type of cheese that will overpower the rest of your bagel sandwich ingredients. Provolone is such cheese. It’s an Italian cheese made from cow’s milk with a moderately sharp, buttery taste. Other options you can use are Mozzarella, Gouda, or mild cheddar cheeses like Colby Jack, or Monterey Jack Cheddar cheese. As an added consideration for provolone, it melts easily, especially since we’ll be cooking our cheese with the other fillings.

Butter

Don’t forget the butter! Butter adds moisture and a rich flavor to your bagel. We’ll use it to cook our fillings but go ahead and smear it on your bagel for an extra layer of flavor if you wish.

Eggs

The eggs will help bind all the ingredients together which will prevent the fillings from falling out of the sandwich.

How to make this turkey egg and cheese bagel

Put the bagels in the toaster. Crack two eggs in a bowl and beat them with a fork for a minute or two. Then set aside. Heat up the butter in a skillet over medium-high heat.

Beaten eggs in a white bowl.

Once the butter has melted and is sizzling add the beaten eggs to the skillet. Tilt the skillet slightly all around so that the runny eggs run toward the edges of the skillet. Let them set as if making an omelet. While the eggs are still a little runny on the top add the provolone cheese slice to one side of the egg. I like to cut the cheese slice in half so that it fits neatly on the egg.

Next it’s time to add the sliced turkey lunch meat. You’ll want to make sure you’re working quickly when assembling this turkey and cheese omelet as it cooks very fast and could easily burn. Then fold the turkey and cheese omelet.

Egg, provolone and turkey on eggs.

Then cut the omelet in half. Place each half between each bagel and serve.

I really like how the turkey omelet keeps everything nice and neatly tucked in. This way you don’t have to worry about the turkey or cheese sliding off the bagel.
