There’s nothing better than starting the morning with a warm, fluffy stack of homemade pancakes. These are a staple in our home. I make them for my kids and I almost every single week! They’re soft, buttery, and easy to whip up with ingredients I always have on hand.

I love that this recipe doesn’t require any fancy ingredients. Just simple pantry basics like flour, sugar, salt, baking powder, and vanilla. I usually buy most of these items in bulk at a nearby Sam’s Club. This saves me money and ensures I’m never out of the ingredients when a pancake craving hits (which is often).
These pancakes come together in minutes, so they’re perfect for slow weekends or even busy mornings when you want to make something special without a lot of fuss. I’m just gonna be honest with you, I also make these at night for dessert often. They’re sooo good! Sometimes I make a double batch just so we have a few extras for breakfast the next day!
I usually use about 1/3 cup of batter per pancake, which makes them nice and hearty. And don’t worry if the batter is lumpy—those lumps are totally fine and actually help keep the pancakes tender and fluffy.

Homemade Pancakes
These delicious homemade pancakes are a crowd pleaser. We love them for breakfast or even dessert!
Ingredients
- 2 cups all purpose flour
- 3 tsp baking powder
- 2 tbs sugar
- 1 tsp salt
- 2 eggs
- 1 1/2 cup milk plus 2 tbs
- 2 tsp vanilla extract
- 4 tbs butter melted and cooled
- 2 tbs vegetable oil for cooking
Instructions

In a large bowl, whisk together flour, baking powder, sugar and salt.

In another bowl, whisk eggs while slowly pouring in milk and vanilla.

Stir wet ingredients into dry. Then mix in melted butter. Batter will be lumpy.

Heat a large skillet over medium heat and coat with the oil.

Pour about 1/3 cup of batter into the skillet. Cook for 1 minute then flip and cook for another 40-60 seconds. Transfer the pancake to a plate and repeat the above steps with the remaining batter adding more oil as needed.

Serve with your favorite toppings and enjoy.
