Chilaquiles with Tortilla Chips

These chilaquiles with tortilla chips and canned red enchilada sauce is the easiest breakfast recipe ever!

You can have it ready and on the table in less than 15 minutes.

What you’ll need

These are the easiest chilaquiles you’ll ever make!

All you need are just three simple ingredients which include canned red enchilada sauce, a bag of tortilla chips and shredded cheese.

Then you also have the option of garnishing them with diced onion, cilantro, avocado or your other favorite toppings.

Use your favorite canned red enchilada sauce.

It’s very important to use one you like as the sauce is what’s going to flavor the chips.

As for the tortilla chips, you’ll want to find thick sturdy chips that won’t break so easily otherwise the whole dish could turn to mush.

And you don’t want that.

I love the ease of using bagged tortilla chips but you could also make your own if you prefer.

How to make it

Heat up a skillet over medium heat and add the enchilada sauce. Let the sauce heat up.

Once the enchilada sauce is hot add the chips. Stir well to make sure all the chips are coated in the sauce.

Then top with the shredded cheese.

Cover the skillet and continue to cook for about 5 minutes or until the cheese has melted.

Serve the chilaquiles and garnish them with your favorite toppings.

Tips

  • Make sure to use your favorite canned enchilada sauce as this is what’s going to flavor the chips.
  • Use thick sturdy chips so they don’t turn to mush after simmering in the sauce.
  • Use the shredded cheese of your choice such as monterrey jack, cheddar jack or mozzarella.
  • Serve these chilaquiles with a fried egg on top to make it more filling.

Ingredients

  • 2 1/2 cups canned enchilada sauce
  • 11 oz bag of tortilla chips
  • 3 cups shredded cheese
