These amazing chilaquiles verdes are a great way to use up any leftover salsa verde you may have in your fridge. Chilaquiles are a simple yet very flavorful and delicious meal that is great for breakfast or really anytime at all!
So I can’t decide which I like better chilaquiles verdes or chilaquiles rojos.
What is your preference?
They are both amazing but if I had to choose I might have to go with the red ones. I just love a good salsa roja.
The best thing about chilaquiles be it red or green is how inexpensive they are.
If you cook Mexican food often then you most likely already have the ingredients needed to make them.
All you need are corn tortillas, salsa verde and your choice of garnishes.
You can use store bought salsa verde but making your own is very easy.
If you use my recipe for salsa verde make sure you omit the avocado.
You don’t need it for chilaquiles.

Chilaquiles Verdes
Chilaquiles verdes are a quick and easy recipe that can be whipped up for breakfast in no time!
Ingredients
- 10 corn tortillas made into chips
- 2 cups salsa verde
- queso fresco for garnishing
- diced onion for garnishing
Instructions

Fry the tortillas into tortilla chips and drain on a paper towel lined plate.

Heat up the salsa verde in a skillet over medium low heat. Once the salsa is hot add the tortilla chips and simmer for a couple of minutes.

Serve and top with your favorite garnishes.
