Coco con Chile y Limon (Coconut with chile and lime)

So today’s recipe is something my husband whipped up for us.

It’s super simple but I still thought it was worth sharing.

If you’re into coconut flavored drinks and treats I think you’ll really enjoy this treat.

Though most coconut flavored foods tend to be very sugary.

Fresh coconut meat isn’t very sweet.

It’s only slightly sweet.

Once the coconut is cracked open use a spoon or knife to remove the meat from the shell.

Then use a potato peeler to peel off the skin.

After that cut the coconut meat into strips then sprinkle it with the chili powder (I use Tajin) and squeeze lime juice over top.

Now enjoy!

This is a really delicious treat that we enjoy and I hope you do too.

And it’s pretty easy to make once you learn how to open the coconut.

Ingredients

  • 1 coconut
  • lime freshly squeezed
  • chile powder

Instructions

  1. Crack open the coconut

  2. Remove the meat from the coconut.

  3. Peel any skin from the coconut meat.

  4. Cut the coconut meat into strips.

  5. Sprinkle the chili powder over the strips and squeeze lime juice over them.

  6. Serve and enjoy.
