Pollo a La Mexicana (Mexican Chicken Recipe)

Pollo a la Mexicana also called “chicken a la Mexicana” is a delicious Mexican recipe that consists of chicken breast simmered in a flavorful tomato sauce. This is a quick and easy meal that’s perfect for busy weeknights.

What is the meaning of a La Mexicana?

“A la Mexicana” refers to the recipes that are made with white onion, green chili and roma tomatoes. These ingredients reflect the colors of the Mexican flag which are white, green and red.

The combination of these three ingredients can really transform a simple meal into something incredibly delicious and flavorful.

Some of my favorite foods to cook “a la Mexicana” include potatoes, tuna, eggs and steak.

Ingredients needed

  • Chicken breast (cut into small chunks)
  • White onion (diced)
  • Jalapeño (chopped)
  • Roma tomatoes (chopped)
  • Cilantro (chopped)
  • Adobo
  • Sazon with achiote and culantro
  • Olive oil

Tips and tricks

The adobo and Sazon are optional. I like using them because they add flavor and color. The Sazon is what adds the color.

If you decide not to use them, you will want to use salt and other seasonings to give the chicken some flavor. Garlic powder, onion powder and black pepper are good options.

If you are sensitive to spicy foods you can replace the jalapeño pepper with half of a green bell pepper.

The cilantro can be omitted if you’re one of the many people who don’t like the taste of it. It can also be replaced with parsley.

How to make pollo a la Mexicana

Season the chicken pieces with the adobo and the Sazon. Then mix well until all the chicken pieces are evenly coated.

Heat up 2 tbs of olive oil in a large skillet over medium heat. Add the chicken and cook for a few minutes.

Then add the onion and jalapeño. Stir and continue to cook for 3 minutes.

Next add the chopped tomatoes and stir. Cover and cook on low for about 8 minutes.

Then add the chopped cilantro to the skillet and stir.

The pollo a la Mexicana is now ready to be served.

What to serve with pollo a la Mexicana?

This easy Mexican chicken recipe goes best with simple sides such as pinto beans, refried beans and Mexican rice. Also, you can’t forget the warm corn tortillas. That is a must!

Ingredients

  • 1 1/2 lb chicken breast cut into small chunks

  • If you don’t want to use the adobo and Sazon seasoning use salt and other seasonings to give the chicken some flavor.
  • Replace the jalapeño with half of a green bell pepper if you’re sensitive to spicy foods.
  • If you don’t like cilantro you can omit it or you can replace it with parsley.
