This old fashioned macaroni and tomatoes recipe is the perfect meal for when you need to stretch your dollars. It’s a quick and easy Southern recipe that can be ready in just 30 minutes! It’s made mostly from pantry staple ingredients making it an inexpensive and meatless meal that will fill your family’s tummies! It goes perfectly with this hot water cornbread.

It’s becoming more important than ever these days to have a repertoire of inexpensive recipe ideas. Especially if you have a large family like I do.

Lately I’ve been doing my best to prepare inexpensive and yummy meals for my family such as bean tostadas, sopita, scrambled eggs and hot dogs and so many others. There are so many cheap recipe options that your family will love! And I hope this macaroni and diced tomatoes recipe will be one of them!

What are the ingredients for old fashioned macaroni and tomatoes?

Since this is a very simple dish it’s very important season to your liking so that it isn’t bland. Recipes for this dish will vary between cooks but this is what I like to include in mine:

  • elbow macaroni
  • canned diced tomatoes
  • butter
  • bacon grease
  • yellow onion (diced)
  • garlic powder
  • black pepper
  • salt

All of the ingredients used to make this dish are staples for us. These are ingredients that we always have on hand. It’s really important to make sure you have a well stocked and organized pantry. This has made grocery shopping a lot easier for us.

What can you do with diced tomatoes?

The reason that diced tomatoes are a staple item for us is because we can add them to so many things. For example, I love adding them to my lentil soup, beef and black bean soup, black bean tortilla soup, chili and drunken beans. They are great to use when fresh tomatoes aren’t in season.

How to make macaroni and diced tomatoes

Melt the butter and bacon grease in a large skillet over medium heat.

Add the diced onion to the skillet and season with the salt and black pepper. Cook for a few minutes.

Then empty the canned diced tomatoes into the skillet. Add the garlic powder and stir. Cover this and let it simmer over medium heat while we prepare the macaroni.

Bring a large pot of salted water to a boil over high heat. Once boiling add the macaroni and cook to al dente according to the directions on the box. Then drain the macaroni and add it to the skillet of tomatoes and stir.

Taste and season with more salt and pepper if you like. Simmer for a couple more minutes. This dish is now ready to serve!

  • Use both butter and bacon grease for the best flavor.
  • Cook the macaroni just to al dente since it will simmer for a couple more minutes with the tomatoes.

Ingredients

  • 2 cups elbow macaroni uncooked
  • (2) 14.5 oz cans of diced tomatoes
  • 1 tbs butter
  • 1 tbs bacon grease
  • 1/4 yellow onion diced
  • 3/4 tsp garlic powder
  • black pepper to taste
  • salt to taste

Instructions
