Today I’m going to show you how to make hot water cornbread.
Hot water cornbread is the perfect side dish for pinto beans, white beans, black eyed peas and red beans and rice.
Though I have no problem eating it all on its own!
I love that with hot water cornbread you don’t have to fuss with all the other ingredients like milk, baking powder, eggs, etc.
All you need is cornmeal mix, boiling water and oil.
It is so simple and simple is just what I need when I always have two toddlers waiting impatiently at the kitchen gate.
All you have to do is mix the cornmeal and salt together while waiting for the water to come to a boil.
Once boiling add it to the cornmeal mix and mix until there are no dry clumps.
Heat up enough oil to fry the cornbread.
Once oil sizzles use a large mixing spoon to drop a spoonful of the cornmeal mix into the oil.
Use the back of a spatula to flatten out the cornmeal mix.
Once the cornbread is browned on the bottom flip it over.
I also like using a spatula to flick oil onto the top side so it can continue to brown.
After frying drain each cornbread patty on a paper towel lined baking sheet.
I use the cornmeal mix by WhiteLily and I really like it.
Even though I’m sure it’s not very healthy I love fried cornbread so much more than baked.
I love how it gets that crunchy texture on the outside, it’s the best part!

Hot Water Cornbread
Hot water cornbread is the perfect side dish for greens and pinto beans
Ingredients
- 2 cups cornmeal mix
- 2- 2 1/2 cups boiling water
- 1 teaspoon salt optional
- oil for frying
Instructions

In a mixing bowl add cornmeal mix and salt. Mix well.

In a pot, bring 2 cups of water to a boil.

When water begins to boil pour it into the cornmeal mix and stir well until the cornmeal mix is moist.(Add more boiling water to cornmeal if needed)

Fill a cast iron skillet half way with oil and heat over medium high.

When oil is hot, drop a spoonful of the cornmeal mixture into the oil, flatten it a little with the back of a spatula.

Fry each side until golden brown.

Transfer to a paper towel lined baking sheet to drain.
