My kitchen is always well stocked with canned tomato sauce.
I love it because it makes it possible to enjoy tomato based recipes even when tomatoes aren’t in season.
I use canned tomato sauce in so many recipes including sopita, fideo loco, creamy chipotle chicken and many more!
What are the ingredients?
This is a simple dish that doesn’t require many ingredients. All you need is:
- shredded chicken
- tomato sauce
- onion (thinly sliced)
- garlic (minced)
- oregano (crushed)
- salt
- vegetable oil
- water
- corn tortillas
You can use the shredded chicken of your choice here.
Rotisserie chicken is perfect here as you don’t have to cook the chicken yourself and it’s super flavorful.
I prefer to use baked chicken breast for this recipe.
How to make it
Heat up some oil in a pot over medium heat. Once hot add the onion.
Season with salt and cook for a few minutes.
Then add the garlic and cook for another minute.
Next add the tomato sauce, oregano and water. Make sure to crush the oregano between your palms to release the flavor. Stir well and let simmer for 10 minutes on medium low.
When done check for salt. Add some if needed.
While the entomatada sauce is simmering we’re going to work on the tortillas.
Heat up about 1/2 a cup of oil in a skillet over medium high heat.
Once hot quickly fry the tortillas for a few seconds on each side.
Then transfer to a paper towel lined plate to drain.
Assembling the entomatadas de pollo
Now it’s time to put the entomatadas together.
Put a tortilla on a plate and fill it with some of the shredded chicken.
Don’t put too much shredded chicken on it or you won’t be able to fold it.
Repeat the above steps with the rest of the tortillas and shredded chicken.
Then pour the tomato sauce on top.
Next garnish them with your favorite toppings such as chopped cilantro, crumbled queso fresco and sliced avocado.
Aren’t you supposed to dip the tortilla in the sauce first?
You can definitely dip the tortillas in the sauce before filling them with the shredded chicken if you prefer.
I however prefer to do it this way because it’s easier and less messy.
What is the difference between enchiladas and entomatadas?
In enchiladas the tortillas are covered in a chile based sauce.
In entomatadas the tortillas are covered in a tomato based sauce.
Enfrijoladas is another similar and delicious dish.

Entomatadas de pollo are an easy and delicious way to use up leftover shredded chicken.
Ingredients
- 2 cups shredded chicken
- 8 oz canned tomato sauce
- 1/4 of an onion thinly sliced
- 1 garlic clove (minced)
- 1/4 tsp oregano crushed
- salt to taste
- 1/2 cup vegetable oil plus 1 tbs
- 3/4 cup water
- 6 corn tortillas
- chopped cilantro optional
- crumbled queso fresco optional
- sliced avocadoes optional
