Pollo a la mostaza (mustard chicken) is a really delicious and easy way to prepare chicken breasts.

How to make pollo en mostaza
The first thing I do is brine my chicken breasts. Gimme Some Oven has a baked chicken breasts recipe that shows you how to do this. I like to brine mine for at least 45 minutes.
While the chicken is brining mince the garlic cloves and cut the onion into thin slices.
After brining, pat the chicken breasts dry and cut them into cutlets. It’s like butterflying them but cutting all the way through. Set them aside.
Preheat the oven to 450.
Now that the chicken is ready it’s time to make the mustard sauce. Combine the honey, mustard, salt and pepper in a bowl and stir with a spoon until well combined.

Heat up a little oil in a skillet over medium heat. Once hot add the sliced onion and cook for 3-5 minutes until translucent. Then add the minced garlic and cook for a minute. Set aside.

Line a baking sheet with foil and spray with cooking spray. Lay the chicken cutlets on the sheet.

Pour the mustard sauce over the cutlets. Top them with the onion and garlic.

Bake for 15 minutes.

Serve the pollo a la mostaza with your favorite side. I like to serve it with something simple like rice or veggies.
