Pollo a la mostaza (mustard chicken) is a really delicious and easy way to prepare chicken breasts. In this recipe, chicken breasts are smothered in a delicious dijon mustard cream sauce. This meal goes great with a simple side of rice or sautéed veggies for a complete meal.

Ingredients needed for pollo a la mostaza
- chicken breasts cut into cutlets
- honey
- dijon mustard
- salt
- black pepper
- garlic (minced)
- onion (grated)
- olive oil
- butter
- chicken bouillon
- water
- heavy cream
- flour
Why would you grate an onion?
This recipes uses grated onion instead of chopped because by grating the onion the mustard cream sauce will have the onion flavor without the texture ensuring a smooth sauce.
How to make mustard chicken in a dijon mustard cream sauce
First we’re going to prepare the sauce. In a large bowl add the honey and the dijon mustard. Stir together well.
Then stir in the chicken bouillon. While stirring, slowly add in the water and the heavy cream. Make sure its well combined. Then set the sauce aside.
Next, it’s time to work on the chicken. Take one cutlet and put it in a large Ziploc bag. Pound the cutlet into an even thickness using a meat mallet.
Remove the pounded cutlet from the bag and repeat this process with the remaining cutlets.
This step will help to tenderize the chicken as well as make the chicken cutlets all an even thickness which will ensure even cooking.
Next season the cutlets with salt and pepper. Then dredge them in flour. Heat up the olive oil in a skillet over medium heat.
Once hot add two chicken cutlets at a time and brown on each side for 2 minutes.
Transfer the browned chicken cutlets to a plate and continue to brown the remaining cutlets. Then transfer them to the plate.
Next melt the butter in the same skillet over medium heat. Once melted add the onion and garlic. Cook for one minute.
Then pour in the mustard sauce and stir.
Bring the sauce to a simmer over medium heat. Once it starts simmering add the chicken cutlets to the skillet.
Spoon the sauce over the chicken and cover with a lid. Let cook on medium low for about 5 minutes.
The dijon mustard chicken breasts are now ready and they smell absolutely amazing!

- 1/3 cup dijon mustard

- 3 tbs olive oil
- 2 garlic cloves minced
- 1/4 white onion grated
- 2 tbs butter
- 1 tsp chicken bouillon
- 3/4 cup water
- 1 cup heavy cream
