Creamy Chipotle Chicken Recipe

This creamy chipotle chicken recipe is super flavorful and very delicious. The best part is that it takes less than half an hour to make! This amazing white bean chicken chili is another chicken recipe you may like.

We absolutely love this recipe in my house. It’s one of my favorites because it doesn’t take long to make yet it’s incredibly yummy and has lots of flavor.

With three kids in the house I don’t have much time to make complicated meals. Thankfully it’s possible to have something impressive on the table for dinner without having to be in the kitchen all day.

There are a lot of ways to make chicken in a creamy chipotle sauce and today I’m going to show you my way.

Ingredients

  • Chicken breast tenderloin
  • Garlic powder
  • Onion powder
  • Ground black pepper
  • Salt
  • Cream cheese (softened)
  • Sour cream
  • Tomato sauce
  • Chipotles in adobo plus some of the sauce
  • Garlic clove
  • White onion
  • Milk
  • Chicken bouillon
  • Vegetable oil

Creamy chipotle chicken recipe instructions:

Put the chicken in a bowl and season it with the garlic powder, onion powder, black pepper and salt. Make sure all the chicken is evenly coated with the seasonings. Set aside.

Put the cream cheese, sour cream, tomato sauce, chipotle peppers plus some of the sauce, garlic clove, onion, milk and chicken bouillon in the blender. Blend for 1-2 minutes or until smooth. Set the sauce aside.

I don’t find this sauce spicy however if you are sensitive to spicy foods you can always add in half the amount of chipotle peppers and sauce before blending. Then taste it after its blended and decide if you want to add more.

In a skillet over medium heat add the oil. When hot add the chicken. Cook for 5 minutes. Do not move the chicken while it’s cooking.

After the 5 minutes flip the chicken and continue to cook for 5 minutes.

Pour the blended sauce in the skillet. Stir and cover the skillet. Reduce heat to medium low and continue to cook for 3 minutes. Then remove from heat and let cool down a bit before serving.

I find this to be a very forgiving recipe. You don’t have to follow this recipe exactly. Lots of things can be changed.

For example if you don’t have the garlic clove or onion you can use extra garlic and onion powder. If you don’t have chicken bouillon you can use tomato bouillon or just salt.

If you don’t have tomato sauce but have tomato paste you can mix that with a little water to get a sauce.

Other cooks use heavy cream in their recipe. The amounts of liquid you add are up to you. If you like a thinner sauce feel free to add more milk. You can also reduce the amounts of cream cheese and sour cream and add heavy cream.

Tips

  • Make sure the cream cheese is softened before blending
  • Add half the amount of peppers and sauce to the blender then taste after blending to see if you want a spicier sauce.
  • Make due with what you have. This is a forgiving recipe and is just a guide so get creative with it.

Ingredients

  • 1 lb chicken breast tenderloin

  • 4 oz cream cheese softened
  • 1/2 cup sour cream
  • 1/2 cup tomato sauce
  • 5 chipotle peppers in adobo plus 4 tsp of the sauce
  • 1 garlic clove
  • 1/4 piece of white onion
  • 1/3 cup milk
  • 1 tsp chicken bouillon
  • 2 tbs vegetable oil

Instructions

  1. Put the chicken in a bowl and season with the garlic powder, onion powder, black pepper and salt. Make sure the chicken is evenly coated. Set aside.

  2. Put the cream cheese, sour cream, tomato sauce, chipotle peppers and sauce, garlic clove, onion piece, milk and chicken bouillon in the blender.

  3. Blend for 1-2 minutes or until smooth. Set the sauce aside.

  4. In a skillet over medium heat add the vegetable oil. Once hot add the chicken. Cook the chicken for 5 minutes.

  5. Flip the chicken and cook for 5 more minutes.

  6. Pour the sauce into the skillet. Stir, then cover the skillet. Reduce heat to medium low and continue to cook for 3 minutes.

  7. Remove skillet from heat and let cool before serving.

Recipe Notes

  • Make sure the cream cheese is softened to make blending easier.
  • If you’re sensitive to spicy foods only add half the amount of chipotle peppers and sauce to the blender. Then blend and taste the sauce. Add more peppers and sauce if you want it spicier.
  • Make due with the ingredients you have in your kitchen. This recipe is very adaptable. So feel free to change up the recipe if you need to.
