Queso Fresco Enchiladas

Queso fresco enchiladas are a quick and delicious weeknight meal that you can throw together in no time! Serve with rice or beans and you have a complete meal.

I recently posted my recipe for authentic enchilada sauce. It’s super easy to make and once you try it you’ll never go back to the canned variety.

Enchiladas are one of my favorite meals. They can be made with leftover shredded meat but I personally prefer cheese enchiladas.

Either mozzarella cheese or queso fresco is fine with me. However lately I’ve been eating a lot of queso fresco.

The mild tasting cheese really allows the flavor of the enchilada sauce to come through.

There are many different brands of queso fresco out there but my favorite will always be the Cacique brand.

I’ve tried others and I don’t know what it is but I don’t care for them. Cacique is the best!

Queso fresco Enchiladas Ingredient list

  • Enchilada sauce
  • 10 oz queso fresco
  • 8 corn tortillas
  • 1/4 diced onion
  • vegetable oil for frying

Making enchiladas especially cheese enchiladas is pretty straightforward. But in case you’ve never made them before I’m going to do my best to explain the process in detail.

How to Make Enchiladas

Go ahead and have the queso fresco crumbled add the diced onion to the cheese and mix well.

Heat enough oil for frying in a skillet over medium heat. Once the oil is hot fry the tortillas quickly one at a time for a few seconds on each side.

Quickly frying the tortillas allows them to become pliable so that we can easily fold them without them breaking.

After frying transfer the tortillas to a paper towel lined plate to drain.

One at a time dip the tortillas into the enchilada sauce.

Place the tortilla on a plate and fill with the queso fresco and close it. Repeat with the remaining tortillas.

Queso Fresco Enchiladas

Ingredients

  • 10 oz queso fresco crumbled

Instructions

  1. Mix the queso fresco and onion together.

  2. Heat up enough oil for frying in a skillet over medium heat. Once the oil is hot fry the tortillas quickly one at a time for a few seconds on each side.

  3. Transfer the tortillas to a paper towel lined plate to drain.

  4. One at a time dip the tortillas into the enchilada sauce.

  5. Place the tortilla on a plate and fill with the queso fresco and close it. Repeat with the remaining tortillas.
  6. Serve.

The queso fresco enchiladas were wonderful I've never made them before there's so much better than what you get in the restaurant so easy I thought they'd be hard and I love cheese enchiladas thank you
