Thin Sliced Chicken Breast with Cajun Seasoning

This thin sliced chicken breast recipe with cajun seasoning is insanely good. The meat is crisp on the outside and juicy on the inside and the spices pack a mean punch. All you really need is a good cajun seasoning and some basic kitchen know-how and you’ve got yourself a fantastic 20 minute weeknight dinner. Even better is that these are amazing as leftovers. This delicious cajun chicken recipe is essentially a blackened chicken recipe. Instead of blackening spice it uses cajun seasoning.

These blackened cajun chicken slices go great with a simple side such as roasted veggies.

Blackened or blackening is actually a term for the cooking process when meat or seafood is brushed with oil and then seasoned with a blackening spice.

The meat or seafood is then cooked in a cast iron pan or skillet on high heat. The combination of the seasoning and cooking process make the chicken acquire a black crust hence the term “blackened”.

Where to get thin sliced chicken breast?

I always slice my chicken breast into thin slices myself. I simply slice them into halves or thirds depending on the size of the breasts.

Then I place them one at a time into a large ziplock bag and pound them into an even thickness so that they’ll cook evenly.

I find that it’s much easier to slice chicken breasts that are slightly frozen. They’re much easier to work with this way.

What is blackened chicken made of?

Blackened chicken is skinless chicken breast or thigh filets, brushed with oil and seasoned with blackening spice and then seared in a pan over medium high heat. In this particular recipe I will be using cajun seasoning.

What ingredients are needed?

Chicken

This recipe uses chicken breasts that are sliced into about 3 slices each and then pounded into an even thickness.

Pounding your chicken is a step that I don’t skip for this recipe. It tenderizes the meat and makes it essentially thinner.

When the chicken meat is thinner it “blackens” faster and cooks faster.

Cooking the chicken over medium high heat with lots of seasonings gives the chicken a really nice dark exterior. That crust gives the chicken its distinct and delicious flavor.

Olive oil

You can use other oils such as avocado, canola or vegetable.

Cajun seasoning

It’s essential that you use a good cajun seasoning because you will not get the “blackened” look or taste of this chicken recipe without these specific spice blends.

You can use a store-bought Cajun seasoning spice or make your own using paprika, garlic powder, cumin, ground black pepper, salt, and cayenne pepper.

It is so easy to make this cajun seasoning spice. You only need a few minutes to put this together and I love knowing exactly what is in the blend with no hidden ingredients.

I also make it a bit spicier than usual according to what our family likes. The heat primarily comes from the cayenne and black pepper.

You can tone down the spiciness by using less of these two ingredients.

How to make it

Brush the pounded chicken slices with olive oil. Then season both sides of the chicken slices with the cajun seasoning.

Rub in the seasoning with your hands to make sure the chicken is well coated.

Heat up a pan over medium high heat and add a couple tablespoons of olive oil.

Once the oil is hot add two slices of chicken and let them cook for 1-2 minutes.

The time may vary depending on the thickness of the filets.

Then flip the chicken over and continue to cook for 1-2 more minutes.

When done transfer the chicken to a paper towel lined plate.

Repeat the above steps with the remaining chicken slices adding more oil to the pan as needed.

How to serve it?

I like this blackened cajun chicken recipe alongside some roasted veggies such as asparagus.

Another way is to roll chopped chicken with red beans, rice, sour cream and guacamole into a burrito.

You can also serve blackened chicken with mashed potatoes, over creamy pasta, a salad, on tacos or on its own with your favorite side dishes.

The blackened chicken slices would also be good in sandwiches.

Ingredients

  5. Then flip the chicken over and continue to cook for another 1-2 minutes.

  6. Transfer the cooked chicken to a paper towel lined plate and repeat the above steps with the remaining chicken slices. Add more oil to the pan as needed.

  7. Serve the cajun chicken with your favorite simple side and enjoy.

Recipe Notes

The chicken slices only need to cook for 1-2 minutes per side because they are sliced very thin. The time your chicken slices will need to cook will depend on their thickness.
