Pineapple Coconut Smoothie Recipe

This pineapple coconut smoothie recipe is an awesome way to use up fresh pineapple.

Its super refreshing and is a great way to cool down.

I absolutely adore pineapple there’s so many yummy things you can make with it.

Did you know you can also use the peel?

You can use the peel for tepache or pera-piña.

So make sure you save the peels!

You can even freeze them if you’re not planning on using them soon.

Ingredients

  • Fresh pineapple chunks.
  • Hemp seeds
  • Sweetened shredded coconut
  • Vanilla extract
  • Coconut milk
  • Crushed ice

I like to add hemp seeds to all my smoothies as they are high in plant protein.

I also like their mild flavor that doesn’t overpower.

If you haven’t tried hemp seeds you definitely should.

As for the sweetened shredded coconut you could always use unsweetened if you prefer.

Put all of the ingredients in the blender and blend until smooth. Then serve.

Can I add sugar?

You can definitely add sugar if you wish. You could also use honey. I however find this smoothie sweet enough on its own.

Can I use frozen pineapple chunks instead?

Frozen pineapple chunks is just fine. You may not want to add the ice though if you’re using frozen pineapple.

Can I use canned coconut milk?

Of course! You can use either the canned variety or the kind that comes in a carton.

If you want a creamier more coconutty flavored smoothie definitely use canned coconut milk.

If you prefer a lighter coconut flavor use the carton variety.

I like this smoothie both ways however I usually use the coconut milk in the carton because I always have multiple cartons of coconut milk in my fridge as we enjoy it many things such as oatmeal, chia pudding, banana smoothies, and this cinnamon milk tea.

Ingredients

  • 3 cups pineapple chunks fresh
  • 3 tbs hemp seeds
  • 1/4 cup sweetened shredded coconut
  • 1 tsp vanilla extract
  • 1 1/2 cup coconut milk
  • 1 cup crushed ice

Instructions

  1. Put all of the ingredients in the blender.

  2. Blend until smooth.

  3. Serve and enjoy!

Recipe Notes

  • If you use frozen pineapple chunks you may want to leave out the crushed ice.
  • Use canned coconut milk for a creamier more coconutty flavor.
