Mexican fideo soup with ground beef and potatoes is one of those meals that is always a hit in my home. My children absolutely love it! Whether I make it meatless, with chicken, or with ground beef, my kids and husband never turn it down which is a huge relief because it’s a very versatile and inexpensive dish to make!

The version I’m sharing today is one of my favorites because it’s extra easy to make and doesn’t require a blender like my other version which features a blended tomato sauce. That means less cleanup for me. Instead of blending the tomatoes into a sauce I simply chop them and cook them down in the pot.

The toasted fideo adds so much flavor to the broth, while the ground beef and potatoes make this soup hearty and filling.

Slightly caramelized ground beef adds a deeper flavor and richness. The base of the broth is made with chopped roma tomatoes, onion, garlic, and tomato bouillon which provide more flavor.

The fideo noodles are toasted in oil until golden brown. Doing so gives them a nutty flavor and also helps keep them from becoming mushy in the soup.

Diced potatoes make the soup extra hearty, and fresh cilantro and lime juice add brightness at the end. The lime juice is optional but I feel it really helps bring out the amazing flavors of the soup!

Toast the fideo well before adding it to the soup. Toasting the noodles adds an extra layer of flavor and also helps the pasta keep its shape so it doesn’t absorb too much broth.

Cook the beef until it’s lightly caramelized. Letting the beef brown slightly instead of just steaming it adds even more flavor to the soup.

Dice the potatoes into small pieces. Smaller pieces will cook faster and become tender in the broth at the same time as the pasta.

Ingredients

  • 1 lb ground beef
  • 1/2 onion chopped
  • 3 cloves garlic minced
  • 2 gold potatoes peeled and diced
  • 5 roma tomatoes chopped
  • 7 oz fideo noodles
  • 1 tbs vegetable oil
  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • tomato bouillon to taste if necessary
  • 4 cups water
  • 1/2 bunch cilantro chopped
  • fresh cut limes for serving (optional)

Instructions

  1. Heat a large skillet over medium heat.

  2. Add the ground beef and crumble it with a spatula.

  3. Cook until the moisture evaporates and the beef gets slightly caramelized.

  4. While the beef cooks, heat another skillet over medium heat.

  5. Add the oil, then the fideo. Toast, stirring often, until golden brown.

  6. Remove from heat and set aside. Add the chopped onion to the beef and cook for a few minutes until softened.

  7. Stir in the garlic and cook for about 30 seconds. Season with salt and black pepper.

  8. Add the chopped tomatoes and cook for about 5 minutes, until softened.

  9. Stir in the diced potatoes.  Add the toasted fideo and 4 cups of water.

  10. Season with tomato bouillon to taste (you can also use chicken bouillon or adjust with more salt).

  11. Bring to a simmer, cover, and reduce heat to medium-low. Cook for about 15 minutes, or until the potatoes and pasta are tender.

  12. Stir in the chopped cilantro. Serve with fresh squeezed lime juice on top
