
This easy sopita with ground beef is a comforting Mexican noodle soup made with toasted fideo, potatoes, tomatoes, and fresh cilantro.
Heat a large skillet over medium heat.
Add the ground beef and crumble it with a spatula.
Cook until the moisture evaporates and the beef gets slightly caramelized.
While the beef cooks, heat another skillet over medium heat.
Add the oil, then the fideo. Toast, stirring often, until golden brown.
Remove from heat and set aside. Add the chopped onion to the beef and cook for a few minutes until softened.
Stir in the garlic and cook for about 30 seconds. Season with salt and black pepper.
Add the chopped tomatoes and cook for about 5 minutes, until softened.
Stir in the diced potatoes. Add the toasted fideo and 4 cups of water.
Season with tomato bouillon to taste (you can also use chicken bouillon or adjust with more salt).
Bring to a simmer, cover, and reduce heat to medium-low. Cook for about 15 minutes, or until the potatoes and pasta are tender.
Stir in the chopped cilantro. Serve with fresh squeezed lime juice on top
