Fideo con Papas

What is fideo con papas?

Fideo con papas is a simple Mexican soup recipe consisting of noodles and diced potatoes simmered in a flavorful tomato broth.

Ingredients needed

  • vegetable oil
  • vermicelli or fideo noodles
  • canned tomato sauce
  • white onion
  • garlic cloves
  • ground cumin
  • chicken bouillon
  • gold potatoes
  • water

How to make sopa de fideo con papas

This recipe is super easy to make. If you’ve made sopita before you’ll see that this recipe is the same. You’re just going to be adding diced potatoes to it.

First peel and dice the potatoes into small cubes. Make sure to dice them small so that they’ll cook quickly.

Put the diced potatoes in a bowl and cover with water. This will prevent them from turning brown.

Next make the sauce. Put the tomato sauce, onion, garlic cloves, cumin, bouillon and two cups of water in a blender.

Blend until smooth. Then set the sauce aside.

Heat up the oil in a skillet over medium heat. Once the oil is hot add the noodles and cook for about 5-7 minutes stirring frequently until the noodles are a golden brown color.

Then add the sauce. Stir and cook for a minute.

Next, drain the potatoes and add them to the skillet.

Add the rest of the water and stir.

Bring to a boil. Then reduce heat to medium low and cover.

Cook for about 10 minutes or until the potatoes are tender. Remove from heat.

Ingredients

  • 2 small gold potatoes
  • 7 oz vermicelli noodles
  • 8 oz canned tomato sauce
  • 1/4 piece of a white onion
  • 2 garlic cloves peeled
  • 3/4 tsp ground cumin
  • 3 tsp chicken bouillon
  • 2 tbs vegetable oil
  • 8 cups water

Instructions

  1. Peel and dice the potatoes into small cubes. Put them in a bowl and cover with water. Set aside.

  2. Put the tomato sauce, onion, garlic cloves, cumin, bouillon and two cups of water in a blender. Blend until smooth and set aside.

  3. Heat up the oil in a skillet over medium heat. Once the oil is hot add the vermicelli. Toast the noodles for 5-7 minutes while stirring frequently. When finished the noodles will be a golden brown color.

  4. Stir in the blended sauce. Let cook for a minute. Then drain the potatoes and add them to the skillet. Add the remaining 6 cups of water to the skillet and stir.

  5. Bring to a boil. Then reduce heat to medium low and cover. Cook for about 10 minutes or until the potatoes are tender. Remove from heat.

  6. Serve and enjoy.
