Chimichurri with Parsley and Cilantro

Chimichurri with parsley and cilantro is an amazing Argentinian sauce that goes fantastically well with grilled and baked meats. I used it the other day on these delicious flanken style ribs and my husband was so happy. He said it was his new favorite sauce!

Ingredients

  • 1 cup parsley finely chopped
  • 1/2 cup cilantro finely chopped
  • 5 cloves garlic minced
  • 1 tsp dried oregano
  • 1/4 cup red onion finely chopped
  • 1/4 tsp ground black pepper
  • 1/2 tsp salt or more to tatse
  • 1/2 tsp smoked paprika
  • 1 1/2 tbs red wine vinegar
  • 1 1/2 tbs lemon juice
  • 1/2 cup olive oil

Instructions

  1. Combine all ingredients together in a bowl and stir well. Cover and let sit at room temperature for a couple of hours.

  2. Serve with grilled or baked meats. Refrigerate leftovers.
