This super easy Mexican rice recipe will become your new favorite side to accompany all of your favorite Mexican dinners. There’s no chopping involved in this recipe and it can be ready in under 30 minutes!

What should I serve with Mexican rice?
Ingredients needed:
- white rice
- Sazon Goya with culantro and achiote packet
- chicken bouillon
- vegetable oil
- water
Here is a photo of the chicken bouillon I use. I always use the Knorr brand.
As you can see there is no tomato sauce nor fresh tomatoes in this recipe.
What’s going to give the rice it’s orange color is the packet of Sazon Goya with culantro and achiote.

How to make it
Heat up the oil in a pot over medium heat. Then add the rice.
You’re going to toast the rice over medium heat for about 5-10 minutes or until the rice turns a golden color as shown below.

Now that the rice is toasted go ahead and add the water, sazon goya and chicken bouillon.
Stir and bring it to a boil over medium heat. Then reduce heat to low and cover.
Cook for for 25 minutes.

When the rice is done fluff it with a fork.
This easy rice is yummy alongside pinto beans.
Rice and pinto beans are the perfect sides to go with any Mexican meal.

Frequently asked questions
What kind of rice is used in Mexican cuisine?
Long and medium grain white rice and Jasmine rice all work fantastically.
These days I’m partial to jasmine rice however use whichever one you have available.
Why does my rice come out hard?
Your rice may be coming out hard due to not using enough water. Make sure the amount of water you use is double the amount of rice.
For example if you’re cooking 1 cup of rice you’ll want to use 2 cups of water.
Another reason your rice may be coming out hard is removing the lid to check on the rice while it’s cooking.
Removing the lid causes the heat to escape and the rice won’t cook evenly after that.
Once you put the lid on the pot do NOT remove it until it is done cooking.
How do you keep rice from getting mushy?
In order to keep your rice from getting mushy it’s important that you don’t over stir it.
Only stir it once after adding the liquid and seasonings to it.
Another way to keep rice from getting mushy is using the right amount of water.
Using to much water will result in a mushy rice.
So like I said earlier if cooking 1 cup of rice use 2 cups of water. If cooking 2 cups of rice use 4 cups of water and so forth.
