How to Make Quick Puff Pastry

In a large bowl, combine the all-purpose flour and salt.

Add the cold, cubed butter. Gently toss the butter with the flour until all the pieces are coated. Do not try to completely work the butter into the flour. You should still be able to see plenty of butter pieces throughout the mixture.

Slowly pour in the cold water while gently mixing the dough. Add only enough water for the mixture to come together and form a rough ball.

Cover the dough and refrigerate it for 1 hour.

How to Roll and Fold the Dough

After the dough has chilled, lightly flour your work surface and rolling pin.

Roll the dough into a long rectangle. It does not have to be perfectly shaped, but try to keep the thickness as even as possible.

Fold the bottom third of the dough up toward the center. Then fold the top third down over the first fold, just as you would fold a letter.

Rotate the folded dough 90 degrees. Roll it into another long rectangle and repeat the letter fold.

Rotate, roll, and fold the dough one more time. You should complete a total of three letter folds.

Wrap the folded dough and refrigerate it for another hour. Once chilled, the homemade puff pastry is ready to roll out and use in your favorite recipe.

Tips for the Best Puff Pastry

Keep Everything Cold

Cold butter is the key to flaky puff pastry. If the butter becomes too soft while you are working with the dough, wrap it and place it in the refrigerator for 20 to 30 minutes before continuing.

Do Not Overmix the Dough

Mix the dough only until it holds together. It should look rough and may still have visible pieces of butter.

Add the Water Gradually

Depending on how you measure your flour and the humidity in your kitchen, you may not need the entire ½ cup of water. Add a small amount at a time and stop as soon as the dough comes together.

Why Didn’t My Puff Pastry Rise?
