Ingredients

  • 2 cups all purpose flour
  • 2 1/2 sticks salted butter cold and cut into small cubes
  • 1/4 tsp salt
  • 1/2 cup cold water add as needed

Instructions

  1. Add the flour and salt to a large bowl and mix until combined.

  2. Add the cold, cubed butter and gently toss until the butter pieces are coated in flour. Do not completely mix the butter into the flour.

  3. Slowly add the cold water while gently mixing. Add only enough water for the dough to come together and form a rough ball. Do not overmix.

  4. Cover the dough and refrigerate it for 1 hour.

  5. Lightly flour your work surface and rolling pin. Roll the chilled dough into a long rectangle.

  6. Fold the bottom third of the dough up toward the center. Fold the top third down over it, as if folding a letter.

  7. Rotate the dough 90 degrees and roll it into another rectangle. Repeat the letter fold.

  8. Rotate, roll, and fold the dough once more, completing a total of three folds.

  9. Wrap the dough and refrigerate it for another hour.

  10. Roll out and use the puff pastry as directed in your chosen recipe.
