Pickled Watermelon Rind

This is an easy and delicious recipe for pickled watermelon rind. It’s an excellent way to use up more of the watermelon. Try it this summer!

If you enjoy pickles then this recipe is a must try! It has a tangy, sweet and salty taste that’ll keep you combing back for more. What I really love about this recipe is that I feel like I’m getting more for my money. Instead of eating the flesh and throwing away the rind I now have a tasty new way to enjoy the rind! Did you know you can also use the skin from pineapple to make a delicious drink called pera piña?

Pickled Watermelon Rind

A delicious way to make use of the watermelon rind

Ingredients

  • 4 cups watermelon rind green part removed
  • 1 cinnamon stick
  • 1 tsp whole cloves
  • 2 tsp black peppercorns
  • 4 tbs sugar
  • 3 tsp salt
  • 1 1/2 cups rice vinegar
  • 1 1/2 cups water

Instructions

  1. Combine all of the ingredients in a sauce pan. Bring to a boil.

  2. Let boil for 5 minutes. Stir to make sure the sugar and salt has dissolved.

  3. Remove the sauce pan from heat and let cool for 1 hour.

  4. Transfer the rinds to a large mason jar. Then pour enough of the liquid to cover the rinds.

  5. Put the lid on the jar and transfer to the refrigerator.

  6. Once cold serve the pickled watermelon rind and enjoy!
