Easy Huevos Rancheros Recipe
This super easy huevos rancheros recipe is one of my favorite meals to make for breakfast. It’s super easy yet filling and full of flavor. It’s also cheap! I usually don’t cook anything for breakfast. We usually have other things like overnight oats, yogurt, fruit and other easy foods on hand for breakfast. I prefer cooking just one big meal a day so that I don’t feel like I live in the kitchen. But this dish is quick so I don’t mind making it if I already have my salsa ready.
To make my easy huevos rancheros recipe you will need a salsa. My roasted habanero salsa pairs deliciously with the eggs giving them a little heat. But you can use your preferred salsa and it will turn out yummy! I do suggest making your own salsa as it does taste better than the jarred or canned ones.

Huevos Rancheros
Easy and yummy Mexican breakfast
Ingredients
- 2 eggs
- 1 tbs butter
- salsa
- corn tortillas
Instructions

Heat up 4 corn tortillas in the microwave for about 20 seconds or until soft.

Place tortillas on a plate.

In a skillet over medium heat melt the butter.

When butter starts to sizzle crack the eggs into the pan.

Cook for a few minutes until the whites are set.

Flip the eggs and cook for another minute or longer depending on how runny you like your eggs.

Transfer eggs to the plate with the tortillas and top with salsa.
