This fried ice cream recipe is very simple to prepare and much cheaper than the restaurant version!

I have no idea what took me so long to post this.
My husband and I have been making fried ice cream for a few years now.
He actually taught me how.
He used to work in a Mexican restaurant so who better to teach me right?
Anyways a few years ago one summer I was obsessed with fried ice cream and kept ordering it which can get expensive fast!
So finally my husband suggested we make it at home.
It was easier than I thought it would be and I wish we would have done it sooner.
Fried Ice Cream Ingredients and Instructions
- Vanilla ice cream
- Corn flakes cereal
- vegetable oil
- chocolate syrup (optional)
- honey (optional)
So in order to make the ice cream scoop out four scoops of ice cream and quickly shape them into balls.
Roll them in one cup of crushed corn flakes.
Put them back into the freezer for about 30 minutes to harden back up.
While you’re waiting heat up a small pot of oil over medium high heat.
Heat up enough oil so that the ice cream can be submerged in it.
My husband likes his fried ice cream served with the easy sopapillas I make on the side.
If you want your sopapillas flat like in the picture with the ice cream then pierce them with a fork numerous times before frying.

Once the oil is very hot use tongs to submerge the ice cream in the oil for literally just a second.
A second is all that it takes.
Then transfer the ice cream to a paper towel lined plate to drain.
Then repeat with the remaining ice cream balls.
Now garnish them with any or all of your favorite toppings!
