Easy Tomato Soup Recipe

Hi everyone! Do you like tomato soup? I sure hope so because today I’m going to share with you a super easy tomato soup recipe. This recipe is so simple but oh so yummy. The great thing about it is that it’s made with ingredients you most likely already have on hand. It’s the perfect weeknight dinner when you’re running low on time. This delicious soup can be whipped up in no time. It takes just 15 minutes to make. Serve this delicious soup with a salad or sandwich on the side and you have a complete meal. Kids will love it!

I’ve tried making tomato soup before but it never turned out quite right. I think it’s because of the tomatoes I used in the past. The key in my opinion is to use San Marzano peeled tomatoes. You can find these tomatoes in your grocery in the canned tomato products section. With these tomatoes my soup always turns out amazing!

I love tomato soup and this one is so much better than the canned one. If you try it I think you will agree. I was so surprised when my kids finished their bowls of soup. They are so used to the canned soup that I wasn’t sure if they were going to like this one. Thankfully they did! I also made them a grilled cheese sandwich but they didn’t want anything to do with it (lol).

Easy Tomato Soup Steps

Add a garlic clove and 1/4 of a yellow onion in a blender. Then add the tomatoes and blend for a couple of minutes.

Heat up a table spoon of olive oil to a pot over medium heat. Once hot add the blended tomatoes and stir. Then add 1 1/2 cups of chicken broth and stir well. Bring to a boil over medium heat then turn the heat to low and simmer for about 10 minutes.

Serve the soup but let it cool for a few minutes after serving as it will be very hot. Garnish with croutons if desired.

Ingredients

  • 1 clove garlic
  • 1/4 yellow onion
  • 28 oz can san marzano peeled tomatoes
  • 1 1/2 cup chicken broth

Instructions

  1. Add the garlic clove, onion and peeled tomatoes to a blender and blend for a couple of minutes.

  2. Heat up a tablespoon of olive oil in a pot over medium heat. When hot add the blended tomato mixture and stir. Then add the chicken broth and stir well.

  3. Bring to a boil over medium heat then reduce heat to low and let simmer covered for about ten minutes.

  4. serve but let cool a bit before eating it will be hot. Garnish with croutons in desired.
