Sopita de conchitas is a delicious Mexican soup consisting of toasted shell pasta cooked in a flavorful homemade tomato broth. This recipe makes a lot so it’s perfect for large families!
Sopita de Conchitas
Ingredients
- (2) 7 oz bags of mini shell pasta
- 2 tbs oil
- 1 tsp ground cumin
- 1 tsp garlic powder
- 1 tsp onion powder
- 10 cups water
- 6 roma tomatoes halved
- 1/4 piece of white onion
- 3 garlic cloves peeled
- 8 tsp chicken bouillon
Instructions

Put the tomatoes, onion, garlic cloves, chicken bouillon and 1 cup of water in the blender. Blend until smooth and set aside.

Heat up the oil in a large pot over medium heat. Once hot add the pasta and toast for about 10 minutes while stirring frequently. You want the pasta to be golden brown in color.

Next add the ground cumin, garlic powder and onion powder to the pot and stir. Let cook for 5 to 10 seconds. Pour in the blended sauce. Stir and let cook for 1 min.

Next add the remaining water to the pot and stir. Bring to a boil then reduce heat to low and cover. Cook for 10 minutes. Then the soup is ready.
