These quesadillas are an excellent way to use up any leftover chicken.
After making chicken tinga I still had a lot of shredded chicken left so I decided to make chicken quesadillas.
They were easy and flavorful.
Served with rice or beans they make a tasty and inexpensive meal.
How to Make Chicken Quesadillas
In a cast iron skillet over medium heat add two tablespoons of olive oil.
Once hot add one sliced bell pepper and one sliced white onion.
Saute for about ten minutes so they can soften a bit.
Then season with salt, pepper, chili powder, cumin, garlic powder and onion powder.
Now add the shredded chicken and mix well.
Cook until the chicken is hot. Remove from heat.
Heat another skillet over medium heat.
Lay a flour tortilla down flat and sprinkle half of it with cheese.
I used cheddar jack but you can use the cheese of your choice.
Now add a little bit of the chicken mixture
Top with a little more cheese
Close the quesadilla and flip over to give the cheese a chance to melt.
Cook for another 20 seconds or until the cheese has melted.
Transfer quesadilla to a plate and cut in half or you can leave it whole.
It’s totally up to you.
Repeat this process with the remaining tortillas and chicken mixture.
It should make about six quesadillas.
You can serve them with your favorite salsa or even guacamole.
As you can see this is a super easy and quick recipe to prepare.
It’s great for moms who don’t have a lot of time to dedicate in the kitchen.

- 2 tbsp olive oil
- 1 white onion sliced
- 1 green bell pepper sliced
- 1/2 tsp chili powder
- 1/4 tsp ground cumin
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/2 tsp salt
- a few cracks of black pepper
- 1 1/2 cup shredded chicken
- 6 flour tortillas
- shredded cheddar jack cheese
Instructions

Heat two tablespoons of olive oil in a skillet over medium heat. Once hot add the sliced bell pepper and onion.

Lower heat to medium low and saute for about ten minutes to let the bell pepper and onion soften a bit.

Season with the chili powder, ground cumin, garlic powder, onion powder, salt and pepper. Stir well.

Add the chicken and stir well. Continue to cook for about 5 minutes or until the chicken is hot.

In another skillet over medium heat add a flour tortilla.

Sprinkle the tortilla with cheese.

Add a little of the chicken mixture then top with more cheese. Close the quesadilla and flip over and cook for another 20 seconds or until the cheese has melted.
