Frito chili pie is one of my favorite meals.
Its chips, cheese, and chili all on one plate, what’s not to like?
I even make chili sometimes just so I can have it.
I love chili all on its own but it’s 10 times more delicious on top of fritos and topped with cheese.
Using canned chili for this just doesn’t cut it.
It always has a weird aftertaste at least to me.
So you will definitely want to make your own.
When I first heard of frito pie I thought what in the world is that?
But after I saw it I realized that I’ve had it many times.
My elementary school cafeteria served this to us but they called it chili, chips, and cheese.
Whatever it’s called it sure is delicious and addicting.

A lot of times when we make chili there ends up being a ton leftover.
As much as I love chili I don’t really want to eat it for dinner 3 days in a row.
However using the leftovers to make frito pie makes a new and tasty dinner that everyone loves.
When I make this meal I only make one plate at a time.
I never make a casserole dish full of this because if we don’t finish it then the fritos will get soggy fast.
So I make everyone a plate and then we melt the cheese in the microwave.
Using freshly grated cheddar cheese is an absolute must!
Please don’t use bagged shredded cheese on this.
Green onions are also amazing with it.
You can add other additions such as sour cream if you like.

Frito Chili Pie
Have leftover chili?Make frito pie! It might be even better than the chili itself!
Ingredients
- 1 big bag of fritos
- 4 cups leftover chili
- 2 cups grated sharp cheddar cheese
- green onions optional
Instructions

Grab a couple handfuls of fritos and spread out on a plate.

Ladle some chili over the fritos and top with cheese.

Heat in microwave until chili is hot and cheese is melted.

Garnish with green onions.
