Easy Cucumber Lime Agua Fresca Recipe

Cucumber lime agua fresca has got to be the most refreshing beverage I have ever had. Which is not surprising since cucumbers do have a high water content.

While sliced cucumbers with chili powder is one of my favorite snacks I wasn’t sure if a cucumber agua fresca would be good.

It just doesn’t sound that appetizing does it? Or is it just me?

Since I’ve been on an agua fresca kick lately I decided to try it anyways and was pleasantly surprised.

It was pretty good!

If you like cucumbers then you will definitely like this agua fresca.

I think cucumbers and lime are a match made in heaven.

You can’t go wrong there. It is the only way I eat cucumbers.

I was never really a fan of cucumbers and ranch dressing anyways.

Actually I never cared for cucumbers at all. That is until my husband made them for me with lime and chili powder.

Now they’re one of my favorite snacks.

He’s changed my mind about a lot of foods that I thought I hated like guacamole and chicharrones but turns out I just never gave them a fair try.

This recipe is super easy to make like most aguas frescas. It takes less than 10 minutes!

After blending the cucumbers for a minute we will blend the quartered limes for literally like 2 seconds just as we do for agua de limon.

Blending the limes for too long will cause the agua fresca to be bitter and nobody will want to drink it.

This cucumber lime agua fresca would also be great to serve for Cinco de Mayo.

I bet there’s many who haven’t tried it so it’s always great to serve something new!

Cucumber Lime Agua Fresca

A refreshing and cooling agua fresca is just what you need during the hot summer months!

Ingredients

  • 2 large cucumbers peeled and sliced thick
  • 3 limes quartered
  • 6 cups of water
  • 1/2 – 3/4 cup of sugar

Instructions

  1. Combine 4 cups of water and cucumber slices in blender and blend for 1 minute.
  2. Strain mixture into a pitcher.
  3. Put quartered limes and remaining 2 cups of water in blender and blend for 2 seconds.
  4. Strain into pitcher.
  5. Add sugar and stir well.
  6. Serve over ice.

I loved this. I made some changes to fit in with my whole food plant based diet.. I substituted the sugar for maple syrup and I think next time I will juice the lime instead of blending it because the rind tasted bitter to me even with the sweetener.
