I’ve been meaning to post this cold brew Mexican iced coffee for a while now but better late than never. This recipe is cold brew iced coffee which means that it is brewed in cold or room temperature water for 8-12 hours and then strained.
Cold brew is my favorite type of coffee as it is less acidic than regular coffee which means it’s a lot easier on my sensitive stomach.
If you have stomach issues but also love coffee then this recipe is for you!
Cold brew coffee is extremely easy to make. The most important ingredient apart from the coffee is time! So you need to plan ahead.
All you have to is add 1/2 cup of coffee, 1 Mexican cinnamon stick, 2 whole cloves, and 3 cups of water to a container or bowl and stir well. Cover the container and let steep anywhere from 8-12 hours.
Some people let theirs steep for up to 24 hours. I usually only do 8 hours. I do not like my coffee very strong so eight hours is perfect for me however it is completely up to you.
After steeping the coffee grounds they need to be strained. I use a french press but if you don’t have one don’t worry! You can also use a mesh strainer and a cheesecloth. I would have never bought a french press if I had known that.
Although I do love coffee I try not to drink too much. See I have really bad anxiety and too much coffee makes it ten times worse.
Therefore I usually cut my coffee with water and add milk. This way I get to have my coffee fix but not feel like my heart is going to jump out of my chest.

Cold Brew Iced Coffee Recipe (Mexican Style)
This Cold Brew Iced Coffee Recipe is perfect for the Summer time!
Ingredients
- 1/2 cup ground coffee
- 1 Mexican cinnamon stick
- 2 whole cloves
- Mexican vanilla blend
- brown sugar to taste
Instructions

In a container mix together the coffee, cinnamon stick, whole cloves and 3 cups of water.

Let steep overnight for 8-12 hours.

Remove the cinnamon stick and whole cloves.

Strain the coffee mixture in a french press or with a cheesecloth and fine mesh strainer.

serve. Cut with water or milk. Sweeten with brown sugar if desired and add about 1/2 teaspoon of vanilla.
