This delicious chicken fideo soup uses leftover shredded rotisserie chicken making for a super easy and inexpensive recipe that you can whip up in no time! If you enjoy this recipe you’ll have to check out my fideo loco recipe next.

Ingredients needed
- Roma tomatoes
- White onion
- Garlic cloves
- Chicken bouillon
- Olive oil
- Fresh corn kernels
- Canned black beans
- Shredded chicken
- Fideo noodles
- Granulated garlic
- Water
I used fresh corn kernels because that is what I had if you don’t have it you can use a small can of corn instead.
Also instead of fideo noodles you could always use elbow or small shell pasta. Use what you have on hand.
How to make it
Cut the tomatoes in half and transfer them to a blender. Also add to the blender 1/4 a piece of onion, the garlic cloves, chicken bouillon and 2 cups of water. Blend until smooth and set aside.
Heat up the olive oil in a pot over medium heat. Next add the fideo noodles and toast them for 5-7 minutes or until they turn a golden color. Make sure to stir them frequently to prevent them from burning.

Now it’s time to add the blended tomato sauce to the pot. Also add the corn kernels, black beans, shredded chicken and granulated garlic.
Next stir in 6 cups of water. Bring to a boil then reduce the heat to medium and cover. Cook for 10 minutes.

After the 10 minutes the soup is ready to be served.
