This cheesy broccoli rice is technically a side dish… but I eat it like a main. No shame here! It’s creamy, flavorful, and so easy to make—plus it’s packed with broccoli and loaded with melty cheese, so it totally counts as a full meal in my book.

If you’re looking for a quick way to dress up dinner, this is it. Cheesy broccoli rice pairs perfectly with just about anything—grilled chicken, pork chops, baked fish, or even some beans on the side. But honestly, it’s just as satisfying on its own.
What makes this dish so good is the combo of jasmine rice (which cooks up perfectly fluffy), finely chopped broccoli, and a simple seasoning blend that brings out all the cozy, savory flavor. I use onion, garlic, smoked paprika, and a little Better Than Bouillon chicken base for that extra boost. The broccoli cooks with the rice, so there’s no extra step. Everything comes together in one skillet.
Once the rice is tender, in goes a mix of cheddar and parmesan cheese for that gooey, creamy finish. The cheddar gives it that classic cheesy taste, and the parmesan adds a little salty richness that takes it to the next level.
Whether you serve it on the side or eat it straight from the pan like I do, this cheesy broccoli rice is one of those recipes you’ll come back to again and again.
