Cheese Quesadillas are such an easy snack you can prepare in minutes!
So I wasn’t sure if I should post this recipe for cheese quesadillas or not because it’s literally like the easiest thing you will ever make in your life. But since we eat them several times a week I figured why not.
These simple cheese quesadillas in their most basic form consists of only two ingredients. Can you guess what they are?? Jk, obviously cheese and tortillas. I prefer my quesadillas made with corn tortillas. Years ago I used to make them with flour tortillas but these days I prefer the corn ones.
The quesadillas in the photo have mozzarella cheese but you can whatever cheese you like best. Pepper jack cheese is one of my favorites to use in quesadillas. Monterrey jack is also good.
If you want to get a little fancy you could add some diced onion or sliced jalapeños to give the quesadillas a little crunch and a little extra flavor. But my favorite thing about this snack is it’s simplicity so I usually don’t bother with diced onions or jalapeños. For me all I need is a little hot sauce and I’m good to go.
Cheese quesadillas along with some fruit or veggies are a great after school snack I like to make for my son who is always starving it seems when he gets home.

Cheese Quesadillas (Easy and Cheap Snack Idea)
Ingredients
- corn tortillas
- shredded cheese mozzarella, peppper jack, monterrey jack are great choices
Instructions

Heat up a skillet over medium heat.

Place 2 (don’t crowd the skillet) tortillas on skillet and let heat up until they are pliable.

Add a small amount of shredded cheese to the tortillas then fold in half.

The quesadillas are ready when the cheese is melted. (I cook mine a little longer because I like my tortillas browned a little) I flip the quesadillas so both sides get browned.
