How to Make Smothered Chicken Thighs
Season the Chicken
Place the chicken thighs in a large bowl. Season them with the salt, black pepper, garlic powder, onion powder, and smoked paprika.
Rub the seasonings into the chicken so that each piece is evenly coated.

Brown the Chicken
Heat a large pot or deep skillet over medium heat. Add the butter and oil and allow the butter to melt.
Add the chicken thighs in a single layer and brown them for a few minutes on each side, or until they develop a beautiful golden color.
Work in batches so that you do not overcrowd the pot. Overcrowding can cause the chicken to steam instead of brown.
Transfer the browned chicken to a plate and set it aside. The chicken does not need to be completely cooked at this point because it will finish cooking in the gravy.

Cook the Vegetables
Add the sliced onion and chopped red bell peppers to the same pot.
Cook for about 10 minutes, stirring occasionally, until the vegetables begin to soften. Add the minced garlic and cook for another minute, stirring frequently so that it does not burn.
Make the Gravy
Sprinkle the flour over the vegetables. Stir well and cook for about 2 minutes. Cooking the flour briefly helps remove the raw flour taste and gives the gravy a smoother flavor.
Slowly pour in the chicken stock while stirring continuously. Make sure to scrape up the browned bits from the bottom of the pot because they add lots of flavor to the gravy.
Pour in the heavy whipping cream and stir until everything is well combined.
Smother and Cook the Chicken
Return the browned chicken thighs and any juices from the plate to the pot.
Add the dried oregano and thyme. Stir gently, making sure the chicken is coated in the gravy.

Leaving enough space between the chicken thighs allows them to develop a golden crust. This browned exterior adds extra flavor to both the chicken and the gravy.
Do Not Rush the Vegetables
Allow the onion and bell peppers to cook until they are softened. This brings out their natural sweetness and gives the gravy more flavor.
Stir While Adding the Stock
Pour the chicken stock in gradually while stirring. This helps the flour dissolve evenly and prevents lumps from forming in the gravy.
Keep the Heat Low
Once the chicken is returned to the pot, cook it gently over low heat. A slow simmer keeps the chicken tender and prevents the creamy gravy from separating or scorching.
Adjust the Gravy as Needed
The gravy will continue to thicken as it cooks and cools. If it becomes thicker than you prefer, stir in a small amount of additional chicken stock until it reaches your desired consistency.

White rice is my favorite side for this dish because it absorbs the rich, creamy gravy. It would also go well with some mashed potatoes or egg noodles.
Can I Use Chicken Breasts?
I don’t recommend using chicken breasts in this recipe. The boneless skinless chicken thighs are prefect for this recipe because they remain juicy and tender after the long simmering time. Chicken breasts however would become dry.
How to Store Leftovers
Allow the chicken and gravy to cool before transferring them to an airtight container. Store the leftovers in the refrigerator for up to 3 to 4 days.

- 1 cup heavy whipping cream
- 1 tsp dried oregano
- 1 tsp dried thyme
