Ingredients needed:

  • Lime juice (freshly squeezed)
  • Can of coconut milk
  • Sweetened condensed milk
  • Ice cubes

Now, let’s make this delicious drink.

Start by juicing the limes.

Add the ice to the blender.

Then add the sweetened condensed milk, coconut milk and freshly squeezed lime juice to the blender as well.

Blend until smooth.

Ingredients

  • 1/3 cup lime juice freshly squeezed
  • 13.5 oz can of coconut milk
  • 11.8 oz sweetened condensed milk
  • 2 cups ice cubes

Instructions

  1. Add the ice cubes to the blender then add the sweetened condensed milk, coconut milk and lime juice to the blender as well.

  2. Blend until smooth.

  3. Then serve and enjoy!

Okay. I’ve had a ton of limonada de coco in Colombia and the best I’ve had, IMHO, is at a restaurant chain there called Crepes and Waffles. It has the perfect balance of sweetness and acidity, of lime and coconut. This recipe is close, but I used a full cup of lime juice instead of only 1/3 cup, and that helped balance the sweetness of the drink. The other difference with the Crepes and Waffle version is I think they might use a margarita machine to get it slushy / icy without watering it down. Thanks for this recipe. I will continue to tweak it. Perhaps on my next trip to Bogota I can get the actual Crepes and Waffles recipe…
