
Gorditas are a great way to serve leftover barbacoa, carnitas and many other delicious Mexican recipes.
In a large bowl combine the Maseca, flour, salt and baking powder. Mix well.
Slowly add the water while mixing with your hand. Knead for a few minutes. Then form into a ball. Cover and let rest for 30 min.
Form the dough into 8 equal sized patties.
Heat up a pan over medium heat. Add enough oil to coat the pan. Once hot add 2-3 patties at a time and fry on each side for 3 min.
Transfer the gorditas to a paper towel lined plate. Once the gorditas have cooled but are still warm slice them open and stuff them. Serve and enjoy.
