Sopa de Lentejas (Mexican Lentil Soup)

Ingredients

  • 1 carrots peeled and chopped
  • 1 celery stick chopped
  • 1/2 onion diced
  • 1 jalapeño chopped
  • 3 roma tomatoes choppes
  • 1 clove garlic minced
  • 1/2 bunch cilantro chopped (optional)
  • 8 slices bacon chopped
  • 1 1/3 cup lentils rinsed and sorted
  • 5 tsp chicken bouillon
  • 1/4 tsp ground pepper
  • 1/2 tsp ground cumin
  • 1 bay leaf
  • 6 cups water

Instructions

  1. Cook the chopped bacon in a pot over medium heat until crispy.

  2. Transfer cooked bacon to a paper towel lined plate to drain.

  3. Leave a few tablespoons of bacon grease in the pot.

  4. Put the lentils in a different pot with the bay leaf and water. Bring to a boil then reduce heat to medium low and simmer covered for 15 minutes.

  5. Heat up the pot with the bacon grease over medium heat. Add the onion, garlic and jalapeño if using and cook for a few minutes.

  6. Add the tomatoes and cook until softened.

  7. Now add the carrots, celery, chicken bouillon, pepper and cumin. Stir and reduce heat to medium low.

  8. Add the lentils and the water to the pot with veggies. Continue to simmer for 15 more minutes.

  9. Add the cooked bacon and cilantro. Stir.

  10. Serve and enjoy!
