Pollo a la Mexicana

Ingredients

  • 1 1/2 lb chicken breast cut into small chunks
  • 1/2 white onion diced
  • 1 jalapeno chopped
  • 6 roma tomatoes chopped
  • 1/4 cup chopped cilantro
  • 1 tsp adobo
  • 1 packet of Sazon with achiote and culantro
  • 2 tbs olive oil

Instructions

  1. Season the chicken with the adobo and Sazon. Mix well until the chicken is evenly seasoned.

  2. Heat up the olive oil in a large skillet over medium heat. Add the chicken and cook for a few minutes.

  3. Add the onion and jalapeno to the skillet. Stir and continue to cook for 3 more minutes.

  4. Next add the tomatoes and stir. Cover and cook on low for 8 minutes.

  5. Add the cilantro to the skillet and stir.

  6. Serve and enjoy!

Recipe Notes

  • If you don’t want to use the adobo and Sazon seasoning use salt and other seasonings to give the chicken some flavor.
  • Replace the jalapeño with half of a green bell pepper if you’re sensitive to spicy foods.
  • If you don’t like cilantro you can omit it or you can replace it with parsley.
