Ingredients

  • 1 1/2 tbs vegetable oil
  • 2 hot dogs
  • 6 eggs
  • salt
  • pepper

Instructions

  1. Crack the eggs into a bowl and beat them with a fork for a couple of minutes or until the whites and yolks are mixed well. Season with a little salt and pepper.

  2. Slice the hot dogs into small circles.

  3. Heat up a skillet over medium heat. Add some oil. Once hot add the sliced hot dogs and cook for about a minute.

  4. Then add the beaten eggs to the skillet. Stir the eggs around constantly until they are cooked through. This should take just a few minutes.

  5. Serve the huevos con salchicha with refried beans and warm corn tortillas.
