of vegetable oil.

Heat cast iron skillet over medium heat and add oil.

Once oil is hot add the plantains but don't crowd the pan.

Fry for a couple of minutes or until the bottomed is caramelized.

Flip the plantains over and fry for a couple minutes more until caramelized.

Transfer to a paper towel lined plate to drain.

Repeat process with remaining plantain slices.

Serve.
