Tinga de Atún (Tuna Tinga)

Ingredients

  • 12 oz canned tuna drained
  • 1/2 white onion diced
  • 2 garlic cloves minced
  • 5 roma tomatoes chopped
  • 3 chipotle peppers in adobo chopped
  • 2 tbs olive oil
  • salt to taste
  • black pepper to taste

Instructions

  1. Heat up the olive oil in a skillet over medium heat. Add the onion and season with salt and pepper. Cook for 3 min.

  2. Next add the garlic and cook for another min.

  3. Then add the tomatoes and chipotle peppers. Give it a good stir and continue to cook for 3 min.

  4. Now add the tuna and stir. Reduce heat to medium low. Cover and cook for 5 more min.

  5. Serve and enjoy!
