Rice Pilaf

Ingredients

  • 2 tbs butter I use salted
  • 1/2 yellow onion diced
  • 3 garlic cloves thinly sliced
  • 1 cup jasmine rice rinsed and dried
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper
  • 1 cup chicken broth

Instructions

  1. Rinse the rice until the water runs clear, about three times. Drain well and let dry.

  2. Heat a skillet over medium heat. Melt the butter and cook the onion for 5 minutes until softened.

  3. Add the garlic and cook for 30 seconds.

  4. Stir in the rice and toast for a few minutes, stirring frequently.

  5. Add salt, pepper, and chicken broth. Stir and bring to a boil.

  6. Reduce heat to low, cover, and cook for 15 minutes.

  7. Turn off the heat and let sit, covered, for 10 minutes. Fluff with a fork before serving.
