  • 9 eggs
  • 1 cup turkey lunch meat (chopped)
  • 1/2 onion thinly sliced
  • 3/4 cup red bell pepper diced
  • 2 tbs vegetable oil
  • 1/4 tsp ground black pepper
  • 1/2 tsp salt


  1. Crack the eggs into a large bowl. Add salt and pepper.

  2. Beat the eggs with a fork for a couple of minutes. Set the eggs aside.

  3. Heat up the oil in a skillet over medium heat. Once hot add the onion and bell pepper. Cook for about 5 minutes or until softened. Make sure to stir occasionally.

  4. Then add the beaten eggs to the skillet. Let the eggs set for a few seconds then gently stir the eggs with a spatula.

  5. While the eggs are still runny add the turkey to them and continue to stir until the eggs are done. This should take just a few minutes.

  6. Serve and enjoy
